Trying to come up with new and healthy ways to start off your morning can be hard. Here is a new twist on a healthy breakfast recipe that anyone will love. It’s a bacon, egg and cheese breakfast taco. I take center cut bacon, egg whites, and low fat to fat free cheese (depending on your preference) and pair it with whole wheat tortillas(I prefer Mission Carb Balance Whole Wheat because yes I have tried them all). Viola you have a portable breakfast made in minutes.
It has been proven time and time again if you skip breakfast you will tend to eat badly throughout the day. Making this breakfast taco can save you hundreds of calories that skipping breakfast cant. Your body needs most of its fuel in the morning, you want to go anywhere from 300 to 400 calories for breakfast. Adding fruit as a side dish would also help you meet your calorie count and keep you on a healthy diet. I tend to make a fruit salad at the end of the weekend and use that all week or till it’s gone as my side.

Ingredients:
3 slices of Center Cut Bacon
3 egg whites
½ slice of Kraft 2% American Cheese
1 Mission Carb Balance Whole Wheat Tortilla
Salt and pepper to taste
¼ cup of salsa(optional)
Directions:
1.Follow the directions for cooking bacon in the microwave (this will save you tons of time). I place a paper towel on a microwavable plate, place all 3 strips on top of the paper towels and then cover with a paper towel. I cook for the first 3 minutes and then 30 sec to a minute checking in between to see if it is to my liking. (Do not go over 5 minutes)
2.Over medium heat place a small pan and spray with cooking spray. Mix the 3 egg whites into a bowl, add salt and pepper. Then pour it into the small pan. Stir occasionally until the eggs are no longer runny and cooked all the way through takes about 4 minutes.
3.Once bacon is cooked break into small pieces and add to the cooked eggs, also tear the cheese into small pieces and place in the eggs as well. Stir until all the ingredients are combined together.
4.Heat up Tortillas you can do on the stove or in the microwave for about 45 seconds. Place the bacon, egg and cheese mixture into the tortilla. Top with salsa if you desire and you have a healthy breakfast Taco.
