The perfect side dish for breakfast would be hash browns. The bad part is when you get them from the store they are not very healthy for you and can have up to 8 grams of fat for one serving. Since I had some potatoes lying around my house I thought it would be fun to try and make some hash browns for breakfast. This is a fast healthy potato recipe that you can make in no time. I used a cheese grater to make them into a shredded potato. Instead of butter or oil I just used cooking spray. This recipe is a fast healthy side to any breakfast.

Total Time: 15 minutes
Ingredients:
2 russet potatoes
Directions:
1.Wash and peel the potatoes (option if you like skin you can leave it on)
2.Heat a pan on medium high to high heat
3.Use the course side of a cheese grater and grate both potatoes.
4.Spray the pan with cooking spray and place the shredded potatoes into the skillet. Make sure the potatoes are in a single layer or the potatoes will not cook evenly.
5.After 6 minutes of cooking the hash browns flip them over. You only want to turn once to make sure they get the perfect golden brown crispy top.
6.Continue to cook until they are golden brown 6 to 8 minutes. Remove from heat and serve.
