This Black Bean Veggie Dip is a great healthy appetizer. It is good during the summer for a picnic, soccer game, baseball game, or anything else you need a good healthy snack for kids. It’s great for parties all year round as it is light and refreshing. It’s even good on road trips instead of having to stop at fast food restaurants. This light flavorful dip is very healthy with all the right vegetables in it and everyone will love it. This dish can be made a day ahead of the event or can be made that morning.
Black Bean Veggie Dip For A Healthy Snack

Ingredients
- 1 fresh diced avocado
- 1 bag (15oz) frozen sweet corn
- 15oz. canned organic black beans
- 1 cup fresh chopped green onions
- 1 large red bell pepper (chopped)
- 2 cups of fresh Roma tomatoes (chopped)
- 2 jalapeno peppers (seeded and chopped)
- ½ cup lime juice
- ½ cup fresh cilantro (chopped)
- 2 Tbsp. extra virgin olive oil
- 1 tsp dried oregano
- 2 gloves of minced garlic
- Salt and pepper to taste
Instructions
- Preheat oven to 375 degrees.
- In a large size bowl mix the lime juice, cilantro, olive oil, garlic, oregano and salt and pepper together. Once mixed add the diced avocado into the mixture, toss gently and set aside.
- On a large sheet pan, place the corn on the sheet pan to roast in the oven for 20-25 minutes or until it is slightly golden on top. Then place the corn in a bowl to put into the freezer to cool so it does not cook all the other ingredients when toss together.
- In the large bowl with the mixture add the chilled corn, black beans, green onions, red peppers, tomatoes, and jalapenos. Toss gently to make sure everything is coated with the mixture.
