Healthy Mexican Pizza Just Like Taco Bell’s

Are you looking for easy Mexican recipes? I found the recipe for the Mexican Pizzas from Taco Bell and I wanted to remake it into a healthier version because theirs has 540 calories and 30 grams of fat. I just couldn’t believe how bad it was for you. So instead of frying the tortilla shells I decided to broil them in the oven for about 2 minutes on each side to give it that crunch without all the fat from frying. Once everything is assembled and out of the oven you will be surprised on how much it looks and taste like the Mexican Pizza’s from Taco Bell.

Now you can find Taco Bell products in the store but I used just regular named brand omgredoemts for the Enchilada Sauce and the Taco Seasoning but I do recommend the Taco Sauce from Taco Bell. (Mild, Hot, or Fire depending on which you prefer)

To help save on sodium try to find products that are lower in sodium.

Servings: 4 servings
Prep Time: 10 minutes
Total Time: 30 minutes

Ingredients:
8 ounces of ground beef (96/4 extra lean 1/2lbs)
3 TBSP of taco seasoning
2 TBSP of water
Eight 6 inch Flour tortillas (Mission Carb Balance)
1 cup fat free refried beans
2/3 cups of enchilada sauce
¼ cup finely chopped tomatoes
1 cup shredded Fat Free Cheddar Cheese (or 2% reduced Cheddar Cheese or reduced fat Mexican Cheese blend)
¼ cup of chopped green onions (also known as scallions)
Taco Bell taco sauce (optional)

Directions:
1. In a bowl mix together the beef, taco seasoning, and water.

2. Brown the beef mixture in a pan over medium high heat. Fully cooked the meat all the way through.

3. While the meat is browning turn the oven on to Broil. Spray a cookie sheet with cooking spray (I like to put foil on mine for easy clean up).Place each tortilla on the cookie sheet touching a little is fine.Keep an eye on the tortillas as they will brown really quickly, about 2 minutes on each side.

4.Now it is time to assemble each pizza. Place a tortillas flat side down and spread 1/4 cup of refried beans on the tortilla first, then place 1/3 cup of meat mixture. Place another tortilla on top of that. Spread 2 TBSP of enchilada sauce onto of the tortilla. Next place a 1 TBSP of chopped tomato and 1/4 cup of cheese on top. Then add your green onions to taste. Repeat for the other 3 pizzas.

5. Place the Mexican Pizzas back on the cookie sheet and place in the oven. Wait till the cheese is melted about 5 minutes and serve.
